2012 Jack Estate Cabernet Sauvignon
Colour
Dense dark red with vivid violet.
Aroma
Black forest berries, cacao and blackcurrant with hints of spice.
Palate
Generous and full bodied wine which is rich in dark berry fruits. The smooth, velvety tannins are complimented by balanced French oak which leads to a long and harmonious finish.
Winemaking
Excellent winter and spring rainfall with even summer temperatures, resulting in a near perfect growing season for Vintage 2012. These conditions, combined with cool autumn night temperatures and lower than average yields, allowed all varieties to achieve full fruit maturity with ease.
Each block of Cabernet Sauvignon fruit was carefully assessed for optimal ripeness, flavour and tannin development. Indicators of vineyard individuality were scrupulously investigated to ensure each premium parcel of fruit was displaying its own unique expression of the amazing Coonawarra terroir.
Cellaring
With careful cellaring, this wine will gracefully age for the next 10-15 years.
