Colour: Deep crimson red.
Aroma: Classic cassis, red cherry, cedarwood and subtle mint, woven with hints of spice and earthy tobacco.
Palate: An elegant, medium bodied wine with layers of plum, blackberry and mocha, complimented by soft fine tannins. Fine grain French oak is well integrated with the fruit, leading to a refined and clean finish.
Winemaking: The 2021 growing season in Coonawarra was marked by a cool, dry spring and a long, mild summer-ideal for slow ripening and extended hang time. This allowed for optimal flavour development and excellent tannin structure. Cabernet Sauvignon was harvested at peak ripeness and handled with care through fermentation and maturation, enhancing the wine’s complexity and longevity.
